You can access it by the device.params variable inside the payload parser.

If you want to find a specific parameter in your device, you can do this:
// search for the param with key test and return it.
const test_param = device.params.find((param) => param.key === "test");
// check if the param really exist, so you don't throws errors in the code.
if (test_param) {
// output to live inspector the value of the param test
console.log(test_param.value);

Yes, you can. The sent value is not used by TagoIO at all. It is meant to be used by your application or devices in any way you find it useful.
